The top one is better, but not really by that much. In my opinion it's not really worth the extra £150, but if you need more space on the hard drive I guess it's worth it.
The Intel Core i5 is sort of beneficial, but there's not a huge difference between them. OCZ also make better power supplies, and it does matter because it will be more reliable with an OCZ.
In my experience water-cooling is a nightmare (there is a lot more potential for leaks and stuff than you might think, and it's a pain to maintain) and personally I would never get a water-cooled system!
